The ingredients for 4 people :

    • 33 g vacuum-packed or canned chestnuts

1 peeled and chopped onion

  • 14 g butter
  • 1 liter of ready-made bouillon cube
  • 30 cl of whole liquid cream at 33% fat whipped cream
  • 1 tsp. grated ginger
  • 10 cl of cream
  • 2 tbsp. of roasted and crushed hazelnuts

Oil ‘olive

Fine salt

In a hot saucepan, pour a dash of olive oil and a piece of butter, add the chestnuts, fry them for a few minutes and pour in the broth, season with fine salt, cook 20 minutes.

In your whipped cream, add salt and ginger, mix gently and set aside again in the fridge. Mix the soup with a hand blender, add the heavy cream. Continue to mix. Pour the soup into deep plates, drop a spoonful of whipped cream with ginger. Pour a few drops of olive oil and hazelnuts.
